Chicken Palau

A blend of Cinamon, Clove, Cardamom and Spiced Chicken Rice with Fresh cooked Tomato Chutney. One of my Mom’s favourite party and entertaing food. A must in all households around the Fiji Islands. One taste mmmm, Mama will be proud of her boy :) . Great for weddings , parties or just family treats.

Spicy Island style jerk pork

I usually marinade pork for 2 days. Let all the juices and spices get to know one another, become all cushy :) . Fire the BBQ, within few minutes the pork is juicy juicy, charred a little and making its way into the “Tummy”. Served with Rice & Potatoes or make a Bunwich. Your call. I like it either way.
