Spicy Half Chilli ChickenSpicy Half Chilli Chicken

Mains: 5 whole chickens,15 fresh red chillies with seed in,12 fresh large tomatoes, 3 tablespoons of white sugar, quarter a cup of white vinegar, half a cup of soy sauce,10 cloves of garlic,1 large piece of ginger and 2 tablespoons of black pepper.

Preparation: Wash chicken thoroughly and pad dry them. Cut chicken into halves and place them in a roasting pan for the marinating process. In a blender puree the tomatoes, ginger, garlic and chillies. To the puree add sugar, vinegar, soy sauce, pepper and mix thoroughly. This is your marinade.

Now marinade the chicken by evenly pouring the sauce on the chicken. Once marinated let the chicken sit in the fridge for a day. The longer the chicken sits in the marinade the more flavours will soak in :)

Save some of the marinade for basting when you cooking

Cooking: Once you ready to cook take chicken out of the fridge to get it to room temperature. Once it is of room temperature, turn the oven to 300 degree F .and slow cook the chicken for about half an hour.

Once you have cooked for half an hour baste the chicken with the marinade that you have kept aside. Don’t use the marinade it’s been sitting in discard it.

Turn the temperature up to 375 degree F and cook for another half an hour. The chicken is so moist with the all the nice sauces that it would be just ready to fall of the bones.

Take out from oven and cover and let chicken sit .When you ready to eat just pop back in the oven for extra 10 minutes and there you go.

Cautions have beer, wine, water and rum ready just in case :) For smaller portion you can use smaller amount of ingredients.
