Spicy Green Cabbage
One of the many dishes I grew up on was spicy green cabbage. Mom mastered this this and every time she cooked this it was always finger licking good.
Mom cooked this dis once a week mostly on Fridays as it was our vegetarian night. Mom did her prayers on Friday and it was taboo to eat meat that day. This was fine to our family because it was a healthy and tasty dish.
Mom also made roti wraps for us when we went to school. She would make fresh rotis and warm the left overs or cook it the same day and that was our lunch for the day.
I remember very clearly one of my classmates loved my mom’s cooking very much and he looked forward to lunch time. When I would open my roti wrap he would want some of it all the time.
I usually ended up sharing it with him and we both enjoyed the nice meal mom made me and made my friend happy at the same time.
Whenever I cook this dish, it brings back so many special fond memories of mom, the islands, my school mates and above all the love of mom and her care for us in her special way. Thanks mommy
