Mixed Vegetable Fried Rice

For lunch one of the things we have is simple vegetable fried rice. The beauty about this dish is you can use your left over rice from the let over dinner the night before or left over rice from couple of night’s dinner :)

All you do is use your imagination and you have a wonderful plate of delicious creation in front of you in a matter of minutes.

I use both mixed fresh and frozen vegetables for this dish. Actually you can use any types of vegetables it’s really your choice. I prefer peas and carrots the original fried rice mix LOL.

I compliment this dish with many side dishes however I usually prefer mango pickles or fresh tomato chutney Yumm.

This is truly a typical island type of lunch that was cooked in our home when I was growing up. Just keeping the tradition and originality alive LOL. Are you reading this Mama good boy huh? :)
