Dungeness crab in Garlic and Ginger Broth
Mains: 2 large fresh Dungeness crab,1 whole onion,6 large cloves of garlic, 1 large piece of ginger, tablespoon of salt, teaspoon of black ground pepper, 1 large pot full of water.
Preparation: Usually the fisher man will clean the crabs right in front of you so you just come home wash and cook. I usually ask them to cut the crab in half and leave the claws on and that includes the big claw to
Many methods are used to clean crabs such as cleaning it while the crab is alive or putting them in boiling water.
I know it sounds cruel but at the end of the day its food that you are going to eat and not going to waste.
Cut onion into 4 quarters. Peel the garlic, ginger and just give it quick crush so that the juices will come out during the cooking process.
Mix the pepper and salt together in a small bowl. Fill a Large pot with cold water.
Cooking: Turn heat on the stove to high heat and place the pot of water on it. Once the water is starting to boil a little add all the above ingredients to the water.
Aha not so faster mister not the crabs remember you are making a nice broth first
LOL.
Bring the water and all the beautiful ingredients to a boil. Once the water has boiled turn heat low and simmer for an hour. If need be add extra water salt and pepper to taste.
I know this is painful, you want to eat the crab right now but patience is a virtue
Once the broth looks and tastes like you want it to be and tasty tasty and all the ingredients are nearly melted time for the crabi to go in.
Put the crabs in the broth carefully because the broth would be very hot so no spills and extra thrills ok.
Once you have placed the crabs in the broth let it cook for about 5 minutes. Crabs don’t take long to cook and once the colour has turned to an orangey red you know it’s done.
The crabs by now would have soaked all the nice flavours of the broth and is ready to be, say what eaten yes eaten. LOL
