Duck slowly cooked in Aromatic Spices

Christmas time is a time to give thanks and celebrate with family and good friends :)

Duck curry is a delicacy and one of the favourite dishes of the Fiji Islands. When family and good friends get together this dish is cooked in appreciation. So this Christmas I decided to carry on the tradition of cooking this special dish for family and friends and surprise them :)

Duck curry also happens to be my best friend’s wife, Anj’s, favourite dish. No better time than Christmas to treat her to this island favourite. So I decided to I surprise her with this delicious dish this weekend.

Oh, you should have seen the look on her face when I arrived with the duck curry :) it was the most precious site I had seen in a long, long time.

We had such a nice time; lots of good love and blessings were shared over this meal. That’s what friends and family are for, good times, bad times, duck curry times and chow times LOL

This is a dish that takes a lot of time preparing it so sitting down and enjoying it after the hard labour of love you have invested in it is worth every minute.

To fully appreciate the duck curry, you have got to truly appreciate it for its taste and the array of aromatic flavours this dish brings to the table.
