Boiled Corn

When I was growing up in the islands corn was a very versatile vegetable. You could boil it cook it on top the fire or just throw it on some hot coals and after about half an hour you would have a delicious snack.

My Mom loved corn and she would prepare it as a lunch time snack. We would all look forward to lunch time and the mom in her high pitched voice would call us to the table or outside on the porch to munch on this beautiful snack.

Mom and her generation had lots of folk tales to share and this was one of the times she would tell us about her childhood days and how she grew up and how she enjoyed corn when her Mom cooked it.

Mom would always take each kernel out with her thumb before eating. It was quite a delight to watch her as she nibbled on each kernel. For us it went straight to the mouth no time for nibbles just the whole stuff :)

We had some very nice laughs and nice stories to share and now when I eat corn with my family we do the same things .Nice tradition to follow except not nibbles LOL
