Bitter Melon Curry
I remember my childhood days when we had so much land to plant our own fruit and vegetables back in the island. What we look at organic food these days was grown back in the 70 ies and 80 ies.
Dad would prepare the land by cleaning the shrubs with the machete first then I would gather all the shrubs and rake them into a pile. I would take the pile and place it one end of the land waiting for it to dry out so that we could burn it.
Then we would each take a pitch fork and dig the soil and loosen the earth to ready it for planting. It was a very strenuous process however we knew that the fruits that the land would bear would be rewarding at the end.
One of the many things we grew in our home farm land was bitter melon. Bitter melon grows mainly on vines and takes a very short time for it to be ready for harvest. That’s the best part the taste is acquired one.
Bitter melon as the name states is truly bitter and it takes special preparation to cook for you to really appreciate what this vegetable really offers.
